Such a recipe is a rather interesting choice for summer menu. Thanks to soaking in water and thin cutting (you can use a grater shredder) the taste of onions is softened. Salt and cashews are best added just before serving, as they will absorb juice from watermelon. Soak half the red onion, sliced into thin rings in cold water. Blot with paper towels 4 tbsp. chopped diced watermelon and 1 cucumber without seeds, sliced across. Mix with a handful of finely chopped mint. Drain and wring. bow. Add it to the salad along with a small amount chopped cashews. Pour in 1/4 tbsp. olive oil and juice from 1/2 lemon. Salt and mix.
