Ingredients for the recipe:
- 1 tbsp. basmati rice (rinse slightly and drain the water)
- 1/4 Art. chopped dried apricots
- Ground black pepper
- 2 wide strips of lemon peel
- 2 tbsp. cold water
- 3 tbsp. l (45 gr.) Butter
- 1 chopped medium onion head
- 1 and 1/4 tsp coarse salt
- 1/3 fresh mint leaves
- 1 bay leaf
- 1 tsp spice mixes Garam masala (Indian spice mix from cinnamon, nutmeg, cloves, allspice, cardamom, star anise)
- 1/4 Art. roasted unsalted pistachios or cashews

Recipe preparation:
- Put dried apricots and lemon zest in 2 tbsp. cold water. Вmedium-sized saucepan over medium heat melt the creamy oil, add spices to Garam masala and fry, stirring, until the appearance of aroma, about a minute. Add onion and 1/4 tsp. salt and cook, stirring occasionally, until the onions are soft and transparent, about 6 minutes
- Add rice and cook, stirring occasionally until it starts to brown, about 4 minutes Add water with dried apricots and lemon zest, as well as the remaining teaspoon of salt and pepper to taste. Bring to a boil. Reduce the heat to low, wrap cover the pan with a clean kitchen towel and cover it. Cook 10 min., let stand for 5 min., then remove the lid and mix with a fork. Put the pilaf on a serving plate or in a slide shallow bowl, pick the mint on top and sprinkle Nuts. Cooking tip: While the rice is being cooked, brown the nuts. Wrapping the lid with a kitchen towel, you save steam in a pan, thanks to which rice will turn out friable. Also a towel absorbs condensation, which otherwise will collect on lid and drain back into the pan.
