Peel and dice 2 tubers of potato cultivar Russet and 2 carrots; boil in boiling salted water until softened, about 8 min, adding at the last minute 3/4 tbsp. frozen peas. Drain and allow to cool. Mix with 2 chopped cooked hard boiled eggs, 1/4 Art. mayonnaise, 1 tbsp. l olive oil and 1 tbsp. l white wine vinegar, 1 tsp. mustard, salt and pepper.
