Toastados with chicken, black beans and salad of red cabbage

Ingredients for the recipe:

  • 4 taco corn tortillas (flat, hard tortillas from wholemeal corn flour)
  • 450 gr black bean, no liquid
  • Grilled chicken half, split meat into fibers, cut in large pieces
  • 2 tbsp. finely chopped red cabbage
  • 1 bunch of radishes (approx. 6 pcs.), Cut into strips
  • Half a bunch of cilantro, coarsely chopped
  • 1/4 Art. canola oil, and more for frying
  • Coarse salt and freshly ground pepper
  • 1 tsp ground cumin (zira)
  • 1/4 Art. chicken broth
  • 1 tbsp. l ancho chili paste or chipotle pepper paste in sauce adobo
  • 1 clove garlic, chop
  • 1/4 Art. lime juice
  • 2 tsp brown sugar
  • 1/2 tbsp. sour cream

Recipe preparation:

  1. Heat a heavy skillet to a moderately high temperature, pour canola oil 1 cm. Fry corn cakes in hot oil, until golden brown and crisp, approximately 2 minutes on each side. Put tortillas on paper towels and sprinkle with salt.
  2. Pour the oil from the pan, leaving 2 tbsp. l Add beans and ziru, stir fry, 1 min. Add the broth and simmer, kneading beans with a spatula, until the liquid boils. Season with salt and pepper.
  3. Beat with a whisk 1/4 tbsp. canola oil in a large bowl, mix garlic, chili paste, sugar, 2 tbsp. l lime juice, 1/2 tsp salt. Add cabbage, radish and cilantro, shake. Stir the sour cream and the remaining 2 tbsp. l lime juice in another bowl, salt and Spice up.
  4. Put beans, meat and salad on each cake, cover on top sour cream.
