- Peel and wash the onions and carrots. Chop the onion into a small cube. Chop the carrots through a fine grater.
- Wash greens, dry on a paper towel, finely chop it up.
- We begin to prepare liver mousse. In vegetable oil slightly fry the onions, add carrots to it, continue to fry for a short time, lay out the liver, fry for another 15 minutes, stirring occasionally.
- Put the cooled liver in a blender, pour cream, puree.
- Put the liver in a bowl, mix with chopped herbs, taste salt and pepper.
- Wash the cherry tomatoes, cut into two halves. Boiled hard-boiled quail eggs are also divided into two parts.
- Using a pastry syringe, lay the liver mousse in tartlets.
- Place halves of cherry and eggs on the mousse.
- Garnish with green onion arrows.
