Salsa Pico de Gallo
- 4 ripe tomatoes (peeled and chopped)
- 1 jalapeno pepper (peeled and finely chopped)
- 1 small onion (chopped)
- 1/4 Art. or 2 handfuls of cilantro leaves (finely chopped, you can replace with parsley if cilantro is not to your liking)
- Salt
Topping
- 1 tbsp. l olive oil
- 450 gr ground beef
- 2 cloves of garlic (finely chopped)
- 1 small onion (chopped)
- 1 jalapeno pepper (peeled and chopped)
- 1 tsp salt
- 1.5 tsp dark chili powder
- 1.5 tsp (half a handful) ground cumin
- 2 tsp or 1 tbsp. l cayenne pepper sauce
- 425 gr. black bean
Cheese sauce
- 2 tbsp. l (30 gr.) Butter
- 2 tbsp. l flour
- 2 tbsp. milk
- 350 gr (2.5 tbsp.) Cheese with Pepper Jack pepper (grated on coarse grater)
Optional side dish
- Sour cream
- Chopped green onions
- Finely chopped black olives
- Pimento Indian Pepper (chopped)
- Sliced avocado (seasoned with lemon juice)
- Any hot pepper

Recipe preparation:
- Spread a mixture of corn chips in a very large dish or open pan.
- Combine all the salsa ingredients in a bowl and give them insist on mixing aromas.
- Heat the pan over medium heat. Add oil garlic, onion, pepper and sauté for 2 minutes, then add the minced meat and mix with a wooden spoon. Season the meat with salt, powder chili, cumin and cayenne pepper sauce, cook for 5 minutes, then add the beans and reduce heat to a minimum.
- In a medium saucepan, melt the butter and add the flour simmer for 1-2 minutes over moderate heat, then pour in the milk. When bubbles begin to appear on the surface, add cheese and mix with a wooden spoon. The cheese sauce is ready, it can be removed from fire.
- Pour the chips evenly into the cheese sauce, add the beef and black beans, top with Pico de gallo salsa sauce. Appetizer Nachos is ready! Just serve or add optional side dish from the list.
