Squash patties with sour cream and herbs

Make delicious vegetarian zucchini cutlets. Thanks to its neutral taste, this vegetable incorporates all the tastes and aromas of the remaining ingredients; cutlets are amazing and gentle. Grated zucchini mixed with finely chopped aromatic herbs (basil, oregano), garlic and grated parmesan, and for the strength of the “minced meat” add eggs and breadcrumbs. Cutlets fry in a pan in oil until golden brown and served with sour cream mixed with chopped fresh herbs. Squash cutlets

  • 3 tbsp. grated zucchini (1 large zucchini)
  • 2 tbsp. breadcrumbs
  • 1/4 Art. grated parmesan
  • 2 tsp finely chopped fresh basil
  • 2 tsp finely chopped fresh oregano
  • 2 tsp chopped garlic
  • 4 large eggs
  • 0.5 tbsp. yogurt or kefir
  • 1/4 Art. vegetable oil

Sour cream with herbs

  • 2 tbsp. sour cream
  • 1 tbsp. l chopped fresh chives
  • 1 tbsp. l chopped fresh dill

Recipe preparation:

  1. Cook sour cream with herbs: mix sour cream in a bowl, chives and dill. Make zucchini patties: in large in a bowl mix zucchini, breadcrumbs, parmesan, basil, oregano, garlic, 1 tsp salt and 0.5 tsp black pepper. In a bowl medium-sized beat eggs with yogurt, then mix egg mix with zucchini.
  2. In a large frying pan over medium heat, heat the vegetable butter. Fry cutlets in batches. Form from zucchini mix cutlets (about 1/4 tbsp. mixture for each serving) and put them in the pan. Fry until golden, 3-4 minutes each side. Put on paper towels to drain excess fat, and sprinkle 1 tsp. salt. Serve the patties hot with sour cream. Serve with rice, chicken and broccoli casserole.
