Spicy Salsa Mexican Sandwiches

Ingredients for the recipe:

For bacon:

  • 450 gr smoked boiled bacon, sliced thick sliced
  • 2 tbsp. l ground chili pepper ancho
  • 1/2 tsp cayenne pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp ground cumin
  • A pinch of ground cloves
  • 3 coarsely chopped garlic cloves
  • 2 tbsp. l cider vinegar

For sandwiches:

  • 4 portuguese buns or soft baguettes
  • 225 gr. oaxaca cheese or salted mozzarella grated on grater
  • 3 sliced tomatoes
  • 1/2 small head of iceberg lettuce, chopped

For salsa:

  • 675 gr. tomato, large cut in half
  • 1 small onion, cut into four parts
  • 4 cloves of garlic in a peel
  • 3 jalapenos peppers cut lengthwise and peeled
  • 3/4 Art. greens of cilantro (leaves and soft stems), large chopped
  • 1 tsp cider vinegar
  • Coarse salt

Recipe preparation:

  1. Make salsa: Preheat the oven with grill. Cover the baking sheet with foil and put on it tomatoes, onions, garlic and jalapenos (cut down). Bake for 6-8 minutes, turning over if necessary, until tomatoes and onions charred, but the garlic does not soften. Cool, peel the garlic peel. Coarsely chop the tomatoes, onions, garlic and jalapenos, transfer to a bowl. Add cilantro, vinegar and 1/2 tsp. salt.
  2. Cook the bacon: turn off the grill and preheat the oven up to 175 degrees. Cover the baking sheet with foil, set on top lattice. In a small bowl, mix the chili powder, cayenne pepper, oregano, cumin and cloves, add garlic, vinegar and 1 tbsp. l water. Put the bacon on the wire rack in one layer, brush with a mixture of spices. Bake for 15 minutes until fat begins to melt. Flip with using tongs, continue to bake another 10-20 minutes depending from the thickness of the slices until a golden crust is formed. Dry with paper towels, cool until bacon becomes a little crispy.
  3. Make sandwiches: cut the buns in half, remove some pulp. Lightly roast in the oven for 5-7 minutes. To the bottom put half cooked salsa, then cheese, a few slices of bacon, tomato and salad. Put it on top again salsa. Cover the buns with a little pressure on it. Buns cut in half.
