Sardine Appetizer (Sardeles)

Difficulty: easy Servings: 4 – 6 capacity: 1 cup (tbsp.) – 240 ml. 3/4 cup (st.) – 180 ml 1/2 cup (tbsp.) – 120 ml. 1/3 cup (st.) – 80 ml. 1/4 cups (st.) – 60 ml. 1 tablespoon (tbsp.) – 15 ml. 1 teahouse spoon (tsp) – 5 ml.

Ingredients for the recipe:

  • 900 gr. (approximately 16-20 pcs.) small sardines
  • 450 gr dried and ground gray sea salt
  • 60 ml. lemon juice (from about 2 lemons)
  • 60 ml. olive oil
  • 1 tbsp. l finely chopped oregano
  • 4 sliced tomatoes
  • 20 pitted calamata olives
  • 1 small loaf of sliced rustic of bread

Recipe preparation:

  1. Scrub the sardines with their scissors and heads. Then cut along the ridge to open the fish. Do not cut completely. Take out the ridge. Sprinkle the sardines inside with gray salt and fold the fillet. Sprinkle with salt on the outside and put in a shallow a small plate. Cover and refrigerate for 12 hours.
  2. Rinse the fish well and cut in half on filet. whisk lemon juice, olive oil and oregano in a bowl. On the dish lay out the tomatoes and lay the sardine fillet on top. Water the fish lemon mixture. Put olives on top and serve with rustic bread as a snack.
