Sandwich with Pancetta, Avocado and Salad romano

These sesame bread sandwiches contain fresh tomatoes, avocado, pecorino romano cheese and pancetta – a variety Italian bacon. Sandwich

  • 8 slices of Italian bread with sesame seeds, sliced in diagonals
  • 250 gr pancetta sliced in thin slices
  • 2 Bull Heart Tomatoes, sliced in wide slices
  • 1 romaine lettuce core
  • 1 ripe avocado, sliced in strips and sprinkled with juice lime to prevent darkening

Aioli with Pecorino Romano

  • 1 small clove of garlic
  • 1.5 tbsp. l lemon juice
  • 1 tsp mustard
  • Pinch of sugar
  • 2 yolks of large eggs
  • 1/2 tbsp. canola oil
  • 2 tbsp. l grated cheese pecorino romano

Recipe preparation:

  1. In a large non-stick pan over medium heat, fry pancetta in batches until crisp for 3-4 minutes. with each side. Dry on a paper towel.
  2. For aioli sauce: process the garlic in a food processor in pulse mode. Thus, garlic is not only chopped, but and at the same time flavors the mixing bowl. Then add lemon juice, mustard, sugar and egg yolks. Salt and pepper. Mix for about 10 seconds. before combining the ingredients. Then slowly introduce the vegetable oil without stopping the combine. Scrape the mixture off the sides of the bowl, add the pecorino romano cheese and mix for another 10 seconds. Try it and bring to taste by adding more lemon juice, salt and pepper, if necessary.
  3. Lightly brown the bread. Spread some aioli sauce on each a piece of bread. Put 2 slices of tomato on top, several slices of avocado, 2 slices of crispy romaine and 3-4 slices crispy pancetta. Enjoy it!
