For quesadillas:
- 12 slices of bacon
- 4 wheat tortillas, corn tortilla recipe
- 2 tbsp. grated manchego cheese (about 220 gr.)
- 5 pitted dates, chopped into strips
- 2 tbsp. l extra virgin olive oil
For pistachio sauce:
- 1/2 tbsp. salted pistachio kernels
- 1 tsp dried red pepper flakes
- 1 clove garlic, coarsely chopped
- Juice 1/2 Lemon
- 2 tbsp. spinach
- 1/4 Art. extra virgin olive oil
- Coarse salt and freshly ground pepper
- 1 tbsp. sour cream

Recipe preparation:
- Preheat the oven to 200 degrees. Lay out the slices of bacon evenly on a baking sheet covered with parchment paper, and bake for 15-18 minutes. until golden brown. Bacon should be crispy. Dry with a paper towel.
- Meanwhile, make pistachio sauce: in a bowl food processor mix pistachios, pepper flakes, garlic, juice lemon and spinach and chop finely. Without turning off the combine, pour olive oil slowly, mix until smooth consistency. Add salt and pepper and mix for another 5 seconds. Transfer the mixture to a bowl and mix with sour cream. Leave in side.
- Form quesadillas: one half of each tortilla put in layers 1/2 tbsp. cheese, 3 slices of bacon and a few slices dates. Fold the cake in half, covering the filling with the other half. In a non-stick pan over medium heat, heat a tablespoon of olive oil. Take 2 quesadillas and sauté over 4-5 minutes on each side to a golden color. Cheese inside should to melt, thereby holding quesadillas together. Add to pan remaining tablespoon of olive oil and fry the remaining 2 quesadillas.
- Cut each quesadilla into 4 triangles. Serve with pistachio sauce.
