Quesadilla with Chicken and Beans

Spicy quesadilla stuffed with spicy chicken breast tomato sauce with Mexican elastic Oaxaca cheese and refried beans (this is a traditional Mexican dish that is a paste of pre-soaked and fried beans). Ingredients for the recipe:

  • 4 wheat tortillas with a diameter of 25 cm.
  • 1 boneless and skinless chicken breast (250 gr.)
  • 1 can (430 gr.) Canned baked tomatoes
  • 2 tsp chili powder
  • 1 clove of garlic, squeeze through a press
  • 2 tbsp. grated Oaxaca cheese
  • 1 tbsp. refried beans
  • 2 tbsp. l (30 gr.) Butter
  • Guacamole, salsa, minced chives and sour cream for filing

Recipe preparation:

  1. Mix tomatoes, chili seasoning, garlic, 2/3 tbsp. water and 1/2 hour l salt in a small stewpan. Bring to a boil over medium heat, mash the tomatoes with a spoon and cook for 10 minutes. Put chicken breast in sauce and simmer in tomato sauce over low heat, once turned over in the process, until ready, 8-9 minutes. with each side. Put the chicken on a plate, chop it and return to sauce. Salt and pepper.
  2. Put a tortilla in front of you and sprinkle evenly 1/2 tbsp. cheese Oaxaca. Add a quarter of chopped chicken and tomato sauce and a quarter of beans. Fold the cakes in half, covering the filling. Repeat with the rest of the tortillas and ingredients.
  3. Melt 1/2 tbsp. l (30 gr.) Butter in large pan with non-stick coating over medium heat. Fry quesadillas for approximately 3 min. on each side once turned over during frying, until golden brown, until the cheese melts. Remove onto a large cutting board and repeat with the rest of the quesadillas.
  4. Cut into triangular pieces and serve with guacamole, salsa, green onions and sour cream. Chicken quesadillas recipe.
