Quesadilla
- 9 wheat tortillas with a diameter of 15 cm.
- 450 gr thinly sliced Camembert cheese
- 1 tbsp. l olive oil
- 2 tbsp. l (30 gr.) Butter
- 2 sweet onions, peeled, thinly sliced half rings
- 1 tbsp. l balsamic vinegar
- 2 tsp chopped thyme greens
- Apple chutney recipe see below
- Fresh sprigs of thyme for decoration
Apple chutney
- 3 Granny Smith apples, peeled, cut diced
- 1/2 jalapeno diced in small cubes
- 2 tbsp. l canola oil
- 1 small red onion, finely chopped
- 1 tbsp. l finely chopped fresh ginger
- 2 minced garlic cloves
- 1/2 tbsp. apple juice
- 2 tbsp. l apple cider vinegar
- 1 tsp finely chopped thyme greens

Recipe preparation:
- Preheat the grill to medium temperature. Preheat vegetable and butter in a large saucepan over medium heat. Add the sweet onions and fry it over low heat until caramelization for about 45 minutes Then add balsamic vinegar and thyme; season with salt and pepper. Give cool slightly.
- Put 6 tortillas in front of you and distribute the cheese and caramelized onions between the tortillas, fold in half. Grease top with vegetable oil and grill until golden within 3-5 minutes on each side until the cheese melts.
- Cut into quarters and distribute in portions. Cover each piece with a spoon of apple chutney, and also put inside, slightly bending the cake. Garnish with a sprig of fresh thyme.
Apple chutney
Heat vegetable oil in a steel saucepan for moderate high heat. Add onions, ginger, garlic and jalapenos and sauté to softness. Add half the apples, apple juice and vinegar and cook until apples are soft. Remove from heat and add remaining apples and thyme. Salt and pepper to taste. Transfer to a bowl and let it brew for 30 minutes. before serving, so that the taste and aroma fit into a single composition.
