Mexican Quesadilla is a crispy toasted tortilla tortilla filled with a lot of viscous cheese. Besides the main ingredient – cheese – for a brighter taste, add to quesadillas pickled in citrus juice onions. Put the stuffing between the two tortillas and fry them in a waffle iron. So the edges quesadillas will become even more crunchy and mouth-watering. Ingredients for the recipe:
- 60 gr minced meat for chorizo
- 4 wheat tortillas with a diameter of 15 – 20 cm.
- 1 lime juice
- 1/4 part of a small red onion, finely chopped
- A pinch of coarse salt
- 1 tsp vegetable oil + additionally for lubrication tortillas
- 2/3 Art. grated cheddar
- Guacamole and sour cream for serving

Recipe preparation:
- In a small bowl of non-reactive materials, mix the juice lime, onion and salt. Leave at room temperature, periodically stirring until the onions turn pink, about 15 minutes.
- In a medium sized pan with non-stick coating on Heat the vegetable oil with moderate heat. Add chorizo and fry, smashing the minced meat with a wooden spoon until it becomes brown, about 3 minutes.
- Preheat the waffle iron to a moderate to high temperature. Grease one side 2 tortillas with butter and lay on a work surface dry side up. Sprinkle each 1/3 tbsp. cheese then pickled onions. Cover with remaining tortillas and grease top oil.
- Put 1 quesadilla in the waffle iron, gently close (do not pressing) and fry until golden until cheese is melted, 4-6 minutes. Fry the remaining quesadillas in the same way; cut them into quarters. Serve with toasted minced meat, guacamole and sour cream.
