Delicious homemade potato patties with aromatic mushroom stuffed, deep-fried. Very simple, and most importantly, hearty meal. Served as an independent dish for lunch or dinner, but they can also be made just for a bite to eat.

  1. We will prepare the dough for croquettes. We clean the potatoes, we cut them arbitrarily, so that it cooks faster, and boil until cooked in slightly salted water. Drain the water from the finished potato, add margarine, mashed potatoes. Add spices (salt, paprika, pepper), 1 egg and some wheat flour (to make the dough kept in shape). Mix everything thoroughly.
  2. Let’s prepare the filling for croquettes. Wash and finely chop the mushrooms and bow. Spread the mushrooms on a hot pan with the addition of a couple drops of oil and fry over high heat until excess is gone moisture, until half ready. Fry the onion separately until transparent. Combine the mushrooms and onions, simmer over high heat for 4-5 minutes. Add soy sauce, pepper, salt, if the filling is not enough salty. Mix, remove from heat and cool.
  3. We form croquettes. Grate the cheese. Hands sprinkled with flour or moisten with water (so that the dough does not stick to your hands), take potato dough, about 2 salt spoons, make a cake. AT put the center of the potato cake with a little grated cheese, then mushroom filling, then again you can put a little cheese. Next, seal the filling inside the potato dough, bending and connecting the edges of the cake. If the edge of the tortilla is not enough, put a little more potato dough on the filling. We form a neat potato pie.
  4. Fry croquettes in a pan. We spread the breadcrumbs on a plate. Beat the egg. We heat the pan with a small amount of oil. Dip the prepared croquettes into an egg, then sprinkle it in breadcrumbs and spread in hot oil, fry on medium heat on both sides until golden, crisp.
  5. Serve potato croquettes with mushrooms in hot or cold form. We decorate in portions, watering each portion with sour cream or cream cheese and cream sauce and sprinkled with herbs.
