Ingredients for the recipe:
- 900 gr. boneless pork tenderloin
- 250 gr thinly sliced bacon
- 12 to 16 tortilla corn tortillas
- 2 large onions, cut in half and finely chop
- 1 quarter carrot
- 1 stalk of celery, quarters
- 3 cloves of garlic
- 1 jalapeno pepper, seedless
- 2 tbsp. l olive oil
- 3 tbsp. l tomato paste
- 2 tbsp. l flour
- 2 tbsp. dry red wine
- 1/2 orange
- 1 tsp dried oregano
- 2 bay leaves
- From 1 to 2 tbsp. meat broth
- 1/2 tbsp. cream
- 3/4 Art. grated parmesan
- Fennel salad for serving (see recipe below)

Recipe preparation:
- Cook the bacon in a cauldron over medium heat until crispy crusts, from 10 to 12 minutes. Put on paper towels. Add wine and bring to a boil, then simmer until until the volume decreases by half, about 8 minutes Return bacon and pork in a pan. Squeeze orange juice, then add the zest. Add oregano, bay leaf and enough amount of seasoning to cover pork. Put everything in the oven and simmer for about 3 hours
- Transfer the prepared pork to a bowl with tongs, then cut it. Season with salt and pepper. Strain the sauce and return to cauldron; add everything to a bowl of meat (remove bay leaves and orange zest). Boil the sauce over high heat until thickens, about 2 minutes Add cream and season with salt and pepper. Fill the pork tortillas; pour sauce and sprinkle cheese and salad on top. Beef tacos recipe.
Fennel salad
Mix in a large bowl 1/4 tbsp. mayonnaise, 1 tablespoon red wine vinegar, 2 tablespoons orange juice, 1 tsp sugar, 1 crushed jalapeno, 1/2 tsp. dried oregano, cumin, fennel seeds. Stir with 2 thinly chopped fennel bulbs, 2 tbsp. chopped cabbage, chopped 4 pcs. green onions, 4 strips bacon, salt and pepper.
