Ingredients for the recipe:

  • Juice 4 lemons
  • 1/3 Art. plus 2 tbsp. l rice vinegar
  • 1 tbsp. dark soy sauce (shoyu)
  • 2 tbsp. l tamari sauce
  • 3 tbsp. l Mirina
  • 10 gr. katsuobushi (dried bonito tuna flakes)
  • A piece of giant kelp (kombu) 5×5 cm.

Recipe preparation:

  1. Combine all the ingredients in a bowl and leave for 24 hours. Strain through cheesecloth and store in a cool, dark place or in the refrigerator up to 3 months. Exit: 2.5 tbsp.
