  • 1 tbsp. l coarsely chopped fresh rosemary

Recipe preparation:

  1. Remove the stems from the tomatoes, then cut them in half across and squeeze the juice and seeds into a large a bowl. Add a tablespoon of olive oil, salt and pepper. Add arugula shoots, but do not mix. Chop dice the tomato pulp and mix in a separate bowl with olives and rosemary.
  2. Preheat the grill to a moderate heat. Grease rings of red onion with olive oil and salt. Grill until soft, 3-4 minutes from each side. Put on a plate and separate into separate rings. Reduce grill temperature to average.
  3. Lubricate the pits on both sides with olive oil and fry on grill until the appearance of characteristic stripes, 2-3 minutes. from each side.
