Ingredients for the recipe:

  • 4 large potatoes (about 1 kg.), Peeled and chopped 1.5 cm cubes.
  • 1/3 Art. (approx. 40 gr.) crumbled blue cheese
  • 1/4 Art. spicy buffalo sauce (mature mature sauce cayenne pepper)
  • 1/2 tbsp. mayonnaise
  • 1 small clove of garlic, grate
  • 1/8 tsp smoked paprika + some more for gravy
  • 2 tbsp. l 5% table vinegar
  • Deep-Fried Peanut or Vegetable Oil
  • Coarse salt
  • 1.5 tbsp. l finely chopped fresh parsley and / or leaves celery.

Recipe preparation:

  1. Combine mayonnaise, hot sauce, garlic and paprika in a bowl, cover the mixture and put the sauce in the fridge before serving.
  2. Put the potatoes in a medium-sized pot and pour 2.5 cm cold water. Add vinegar. Bring to a boil and turn down the heat, boil the potatoes at a low boil until half-prepared, 5 min. (this is when the potatoes are slightly soft outside, but still remains solid inside). Drain and lay out potatoes on a baking sheet covered with paper towels to drain excess moisture.
  3. Pour 1 cm of vegetable oil into a large cast-iron pan. put on a moderately strong fire and warm well, but do not Bring to smoke. Add half the potatoes and fry, stirring occasionally until crisp golden color, which takes about 10 minutes. With a slotted spoon put potatoes on paper towels to drain excess oil; sprinkle potatoes with salt liberally. Fry the remaining potatoes.
