Panzanella

Panzanella is a Tuscan summer salad of fresh vegetables that is something more complex and interesting to taste than the usual summer salad of cucumbers and tomatoes, although it is also prepared easy and fast. It is distinguished by the bright taste of vinaigrette dressing and crackers that give the dish more satiety and texture. Cut fresh vegetables – cucumbers, tomatoes, sweet peppers, onions and greens and mix with dressing and crackers. Bright colors of panzanella and its taste gives summer mood. Salad

  • 3 tbsp. l olive oil
  • 1 small loaf of french bread or loaf, sliced 2 cm cubes. (6 tbsp.)
  • 1 tsp coarse salt
  • 2 large ripe tomatoes, diced into 2 cm.
  • 1 greenhouse cucumber, peeled, peeled and chopped pieces 1 cm thick.
  • 1 red bell pepper, peeled and chopped 2 cm cubes.
  • 1 yellow bell pepper, peeled and chopped 2 cm cubes.
  • Half red onion, sliced into thin half rings
  • 20 large basil leaves, coarsely chopped
  • 3 tbsp. l dried capers

Vinaigrette dressing

  • 1 tsp chopped garlic
  • 0.5 tsp Dijon mustard
  • 3 tbsp. l champagne vinegar
  • 0.5 tbsp. quality olive oil
  • 0.5 tsp coarse salt
  • 1/4 tsp ground black pepper

Recipe preparation:

  1. Heat olive oil in a large frying pan. Add bread and salt; fry over moderate heat, tossing frequently, for 10 minutes or until the cubes are browned. Add if necessary more oil.
  2. To prepare a vinaigrette dressing, whisk together Ingredients.
  3. In a large bowl, combine tomatoes, cucumber, red pepper, yellow pepper, red onion, basil and capers. Add the bread cubes and mix with vinaigrette dressing. Salt and pepper taste. Serve or let the salad brew for about half an hour, so that all the flavors and tastes mix.
