- 2 tbsp. water
- 6 tbsp. l olive oil, plus extra for cooking
- 3 tbsp. l chopped basil
- 3 tbsp. l chopped chives
- 1/2 tsp salt
Salsa Verde (green sauce)
- 1 tbsp. chopped parsley
- 1 tbsp. chopped dill
- 1 clove of garlic
- 1 tbsp. l capers
- 1 tbsp. l jar marinade with capers
- 3 tbsp. l olive oil

Recipe preparation:

Panisse
Combine chickpea flour, water and oil in a medium saucepan on medium the fire. Cook, stirring constantly, until mixture custard texture, about 7 min.
- Remove from heat and refrigerate for 10 minutes. Mix with herbs and salt, transfer to a 20 cm baking sheet, cover plastic wrap and freeze for at least 2 hours

Salsa verde
Mash all ingredients in a food processor or blender, adding enough water to achieve a homogeneous mass. Add Season to taste and keep cold until serving.
