Nachos with spicy meat stew and pickled onions

Ingredients for the recipe:

Meat stew

  • 3 cloves of garlic, chop into gruel
  • 2 celery stalks, cut into cubes
  • 2 onions, cut into cubes
  • 1 small fennel bulb, without leaves and pith, dice
  • 3 tbsp. l olive oil
  • Coarse salt
  • 2 tbsp. tomato paste
  • 1 bunch of thyme, bandaged with culinary thread
  • 2 bay leaves
  • 900 gr. chilled spicy Italian sausages for frying, remove shell
  • 2 tbsp. dry red wine with a low content of tannins substances (Beaujolais, Cote du Ron, Shiraz, Pinot Noir)

Pickled onion

  • 3/4 Art. red wine vinegar
  • 1.5 tbsp. l Sahara
  • Coarse salt
  • 1/4 – 1/3 tsp hot sauce (Tabasco)
  • 1 large head of red onion, cut into thin rings

Topping

  • 1 large packet of nachos corn chips
  • 1/2 – 3/4 Art. finely grated Parmesan cheese
  • 1/2 – 3/4 Art. finely grated fountain cheese
  • 1 chilli chipotle in adobo sauce, chop, as well as 1.5 hours l adobo sauce
  • 1/2 tbsp. (120 gr.) Curd cheese mascarpone
  • 1 tbsp. arugula

Recipe preparation:

  1. Cook the meat stew: Put in a food processor garlic, celery, onions and fennel bulb; chop vegetables to a heterogeneous paste. Pour into a large pan olive oil and heat to moderate heat. Add mashed vegetables, salt and cook, stirring, until the whole the liquid will not evaporate and the mixture will not turn brown in color over 30 min.
  2. Add tomato paste to the pan and cook, stirring, 2 – 3 min. Pour in wine, mix, and continue cooking until until the wine evaporates in about half, 4 – 5 min.
  3. Add minced meat and cook, kneading with a spatula, 10 – 15 min. until minced meat is fried.
  4. Pour minced meat with enough water, about 1 cm. Stir, add, deepen in the center, then place in a recess a bunch of thyme and bay leaves. Bring the stew to boil and simmer at low temperature for 3 hours, pouring in

  6. Prepare nachos: Preheat the oven to 180 ° C. Put corn chips in a heat-resistant dish with one layer. From above evenly distribute the meat stew and sprinkle with grated cheese. Bake in the oven for 5 – 10 minutes, until the cheese melts.
  7. Meanwhile, mix in a bowl chopped chipotle with sauce adobo and raw mascarpone. Sprinkle nachos with arugula and cheese mixture, put the pickled onions on top.
