- 7 gr. dry active yeast
- 2 tsp Sahara
- 2 tbsp. l olive oil
- 4 tbsp. premium wheat flour
- 1 tbsp. durum wheat flour wheat
- 2 tsp finely ground salts
For topping:
- 6 tbsp. l olive oil
- 1/2 tbsp. pine nuts
- 1/2 tbsp. finely chopped onions
- 1/2 tbsp. finely chopped red bell pepper
- 6 tbsp. l tomato paste
- 450 gr lamb or ground beef
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/2 tsp red pepper flakes
- 1/4 tsp ground allspice
- Coarse salt
- 2 plum tomatoes, chop finely
- 1/4 Art. natural yogurt
- 2 tsp freshly squeezed lemon juice
- 2 tbsp. l chopped fresh cilantro
- 2 tbsp. l chopped fresh parsley
For the sauce:
- 2/3 Art. natural yogurt
- 1/4 Art. chopped fresh mint
- 1 tbsp. l freshly squeezed lemon juice
- Coarse salt and freshly ground pepper

Recipe preparation:
- Make a dough: dilute the yeast in 2 tbsp. warm water with sugar and olive oil; let stand for 5 min. Mix both types of flour with salt in a large bowl. Add to flour mix the diluted yeast and mix with a fork until dough is formed. Transfer the dough onto a floured work surface and knead homogeneous and elastic consistency, approximately 6 minutes Transfer the dough into a bowl greased with olive oil, cover and put in a warm place for 1 hour, until the dough is doubled.
- Knead the dough with your hands and divide into 12 pieces. Roll out each piece of the ball, cover and leave in a warm place to climb 45 minutes
- Meanwhile, prepare topping: heat 2 tbsp. l olive oil in a large frying pan at medium temperature. Add pine nuts, onions and sweet peppers; Cook, stirring until soft, about 6 minutes Mix in tomato paste and cook for 1 min. Add the remaining 1/4 tbsp. olive oil, minced lamb, cumin, cinnamon, red flakes pepper, allspice and 1/2 tsp. salt. Cook kneading meat with a spatula until the minced meat is browned, 5 min. Mix in tomatoes and cook for 1 min. Remove from the stove and mix the yogurt, lemon juice, cilantro and parsley; add to taste.
- Prepare the sauce: mix yogurt, mint, lemon in a bowl juice and 1/4 tbsp. water. Salt and pepper. Put the sauce in cold place before use.
- Preheat electric grill to medium temperature. Cut off 12 square sheets of parchment paper measuring 23 cm each. Form with hands from each piece of dough a round layer with a diameter 20 cm, lubricating each layer on both sides with olive oil, and stacking, alternating layers of parchment paper.
- Fry the dough without parchment, laying one at a time preheated grill, until golden brown, 1 – 2 min. Then turn over and put on each cake 1/4 tbsp. lamb mixture leaving no large border on all sides. Keep frying pizza, until the dough is completely baked, about 3 minutes Put the pizza on the dish. Sprinkle olive butter and serve with sauce.
