Lamb burgers in prosciutto slices

  • 1 large egg, slightly beaten
  • 2 tbsp. l whole milk
  • 0.5 tbsp. grated cheese pecorino romano
  • 1/4 Art. chopped sun-dried tomatoes
  • 3/4 tsp salt
  • 3/4 tsp ground black pepper
  • 6 large slices of medium-thick prosciutto
  • 1/4 Art. olive oil
  • Fresh basil leaves for serving
  • Tomato mugs for serving
  • Balsamic vinegar for serving

Recipe preparation:

  1. In a large bowl, mix the breadcrumbs, parsley, milk, egg, cheese, sun-dried tomatoes, salt and pepper. Add lamb and mix. Form 6 meatballs 2.5 cm thick from minced meat. put slices of prosciutto on a cutting board or parchment sheet. In the middle of each slice put a patty and wrap prosciutto.
  2. On a medium heat, heat a large pan with a thick bottom. Add olive oil and heat for 2 minutes. Put in pan burgers wrapped prosciutto seam down and fry on moderate heat 6 – 8 minutes until the ham turns golden colors. Turn the burgers over and fry for another 6 to 8 minutes.
  3. Transfer them to a serving dish or to individual plates. On each burger, put 2 to 3 basil leaves, 1 each – 2 cups of tomato and sprinkle with olive oil and balsamic vinegar. Serve immediately.
