Ingredients for the recipe:
- 2 tbsp. l olive oil
- 8 thin slices of salami sausage (preferably Genoese salami)
- 240 gr. champignons “cremins”, cut into four parts
- Coarse salt and freshly ground pepper
- 650 gr. ground beef, preferably from the neck
- Vegetable oil, for grilling
- 4 buns from durum wheat flour, cut horizontally into two halves
- 2 tbsp. young arugula
- 1/2 tbsp. l balsamic vinegar
- 1/2 tbsp. fresh ricotta

Recipe preparation:
- Preheat the grill to a moderately high temperature. Heat up olive oil in a frying pan at a moderate to high temperature. Fry the sausage, laying in a pan in batches, until formed crisp, approximately 1 min. from each side. Transfer to paper towels.
- Add mushrooms in the same pan and fry without stirring until do not fry, about 2 minutes Stir and continue to fry until softened, about 5 minutes more. Season with salt and pepper.
