Hot dogs with lobster

  • 4 lobster tails weighing 170-230 gr. (if necessary thawed), cut in half and peeled
  • Cooking Oil
  • 4 cut top buns or rolls for hot dogs sandwiches
  • 1 tbsp. l washed capers
  • 0.25 Art. dry white wine
  • Grated zest and lime juice 1

Coleslaw with lime and cilantro

  • 1/2 a small head of thinly sliced cabbage
  • 0.33 Art. mayonnaise
  • 0.25 Art. yogurt
  • 0.5 bunch finely chopped cilantro leaves
  • Grated zest and lime juice 1
  • Sliced avocado and tomato for decoration

Habanero Butter

  • 1 chopped seedless habanero chilli
  • 4 tbsp. l sliced butter
  • 4 garlic cloves, finely chopped
  • 1 chopped shallots

Garlic oil

  • 4 tbsp. l sliced butter
  • 6 chopped garlic cloves
  • 3 tbsp. l finely chopped parsley

Recipe preparation:

  1. Make butter with habanero: mix butter, garlic, habanero, shallots and capers in a small saucepan on medium heat; pour 0.5 tsp. salt and 0.25 tsp pepper. Cook until the shallots become translucent, about 5 minutes. Deglaze the pan with wine; add the zest and lime juice and boil until the wine evaporates and practically does not liquid will remain, about 4 minutes. Spread the mixture in 2 small bowls; set aside.
  2. Make garlic butter: mix the butter and garlic in a separate small saucepan over medium heat; cook until the garlic becomes soft and aromatic, 5-6 minutes. Add parsley and mix well. Transfer to a small bowl and set aside. Make a cabbage salad with lime and cilantro: mix mayonnaise, yogurt, cilantro, zest and lime juice in a large bowl. Salt and pepper, mix. Add cabbage and mix well with dressing. Before serving, store in a refrigerator.
  3. Prepare Lobster Hot Dogs: Preheat the Grill to moderately high temperature; grease the grates with oil. Spread half butter with habanero on lobsters. Lay side of the carapace down to the grill. Roast for 3 minutes, then flip the lobsters and cook until the tails are folded and the meat becomes opaque, 4-6 minutes. Remove from grill and let cool slightly. Take the meat out shell and coarsely chop; mix with leftover oil habanero. Spread hot dog buns with garlic butter. Fry on grill until golden brown and crisp, about 30 seconds. Put avocado, tomato, lobster and cabbage in buns salad.
