Ingredients for the recipe:
- 16 large shrimp, peeled and with vein removed (about 450 gr.)
- 16 slices of melon, finely chopped for wrapping
- 6 tbsp. l olive oil
- 3 tbsp. l white balsamic vinegar
- 1 tsp honey
- 8 thin slices of dried prosciutto ham, cut along
- 1/2 tbsp. fresh basil
- 1/2 tbsp. fresh parsley

Recipe preparation:
- In a large saucepan, bring the salt water to a boil. Add shrimp and simmer until cooked approx. 2 minutes. Drain liquid and rinse under cold water; dry and transfer to a large bowl. Add melon, 4 tbsp. l olive oil, 2 tbsp. l vinegar, honey, 1/2 tsp salt and a pinch of ground pepper; mix gently. Let marinate for 15 minutes.
- Wrap 1 slice of melon and 1 shrimp in a slice of ham prosciutto; fasten with a toothpick. Repeat with the rest. ingredients.
- Put the remaining marinade in a blender. Add the remaining 2 Art. l olive oil, 1 tbsp. l vinegar and herbs; puree. Season with salt and pepper. Serve the shrimp in prosciutto ham along with refueling.
