Difficulty: medium Quantity: 8 gyros Recipes use volumetric containers with a volume of: 1 cup (st.) – 240 ml. 3/4 cup (st.) – 180 ml. 1/2 cup (st.) – 120 ml 1/3 cup (st.) – 80 ml. 1/4 cup (st.) – 60 ml. 1tablespoon (tbsp.) – 15 ml. 1 teaspoon (tsp) – 5 ml.

Ingredients for the recipe:

Mutton:

  • 900 gr. sliced 4 cm. meat from the leg or shoulder boneless young lamb (remove excess fat first)
  • 3 crushed cloves of garlic
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/2 tsp dried razmarin
  • 3 tbsp. l olive oil (portioned)
  • Juice 1/2 Lemon
  • 1 tsp salt
  • 1/2 tsp ground black pepper

Topping:

  • 8 pita cakes
  • 2 thin sliced tomatoes
  • Shredded Iceberg Salad
  • 170 gr crumbled feta cheese
  • Tzatziki sauce, recipe below
  • Hot cream sauce, recipe below

Tzatziki sauce:

  • 1 small grated cucumber
  • Finely chopped leaves of 1 bunch of fresh mint
  • Finely chopped leaves 1 bunch of fresh dill
  • Zest of 1 lemon
  • 1 tbsp. natural yogurt
  • Salt

Hot cream sauce:

  • 1 tbsp. sour cream
  • Zest and juice of 1 lemon
  • 2 tbsp. l sriracha sauce

Recipe preparation:

  1. In a large bowl, mix the diced meat with garlic, thyme, oregano, rosemary, lemon juice and a tablespoon olive oil. Mix well so that the lamb is completely topped with lemon marinade. Leave to marinate for 30 minutes.
  2. On a high heat, heat a large deep frying pan and pour the remaining 2 tbsp. l olive oil. Season the meat with a teaspoon salt and 1/2 tsp pepper. Put the lamb in the pan and cook, until it is browned on all sides to a weak state roast, about 4 minutes from each side.
  3. Heat the pits in a dry pan or microwave in for a few seconds so that they become warm and flexible. On put a few pieces of meat, slices of tomato on each cake some iceberg lettuce, feta and a spoonful of each sauce. Shift on a serving platter, roll up and enjoy! make tzatziki sauce: In a small bowl, mix the cucumber, mint, dill, lemon zest and yogurt. Salt to taste and serve with gyros. Yield: about 2 tbsp. To cook hot sour cream sauce: Put sour cream, lemon zest and juice in a small bowl, sriracha sauce and mix well. Salt the sauce to taste and serve with gyros. Yield: about 1 tbsp.
