Grilled Eggplant Steaks with Salad

  • 2 eggplant
  • 250 gr diced feta
  • 4 cubed Roma tomatoes
  • 1 cucumber, peeled and diced
  • 1 tbsp. fresh parsley chopped
  • 1 lemon cut in half
  • A pinch of chili powder
  • A pinch of salt
  • A pinch of ground black pepper
  • Olive oil to water eggplant

Recipe preparation:

  1. Heat the grill pan over medium heat. Cut both eggplant along three thick “steaks.” Pour a little olive oil, sprinkle with chili powder, salt and pepper.
  2. Fry the eggplant steaks until they are soften and they will not appear marks from the grill pan (approximately 4 minutes on each side).
  3. Move the “steaks” from the eggplant to separate serving plates, sprinkle with feta cheese, tomatoes, cucumbers and chopped parsley. Squeeze lemon juice on top. Serve.
