Frittata is a delicious omelet made from vegetables and eggs. Vegetables can use any, to your taste. I offer you a recipe for fritata, cooked from zucchini and potatoes – a favorite in our family.

  1. Peel the potatoes. Grate the potatoes or beat in blender.
  2. Wash the zucchini, peel (optional), grate on a grater or punch in a blender.
  3. Mix zucchini and potatoes. Wring the mass well away from moisture, so that the fritate is crispy.
  4. Cut onions and herbs, add to the vegetable mass.
  5. Add eggs, salt and mix well.
  6. Put the mass on a heated frying pan, oiled, flatten and cover. Cook the frit on the stove approximately 10 minutes over medium heat.
  7. Turn over the finished omelet with a plate to the crisp was on top. Be careful and don’t burn yourself, use a potholder or towel.
  8. Before serving, you can sprinkle with grated cheese and herbs. Serve hot.
