  1. Separate the yolks from the proteins. Proteins are not needed.
  2. Cut the onion into a small cube and fry until transparent in two tablespoons of butter.
  3. Add chopped garlic and brown for another 1 minute.
  4. Pour cognac, stir. To languish for 2 minutes.
  5. Rinse the liver, clean from the veins, cut into slices and punch with a blender in mashed potatoes.
  6. Add yolks, flour, fried vegetables, spices to the blender bowl and salt. Thoroughly punch everything again. Mass should be homogeneous.
  7. Pour the mass into the mold.
  8. We put a container of water in the oven. Heat to 175 C.
  9. Bake the paste for about an hour.
  10. Melt the butter and pour the paste on top.
  11. Cool the paste and remove from the molds.
