  1. Soak overnight in water chickpeas. Fold onto a sieve.
  2. Finely chop the greens.
  3. Put chickpeas, tahini, spices and lemon in a blender bowl the juice.
  4. Punch in a blender to a paste.
  5. Put greens, mix thoroughly.
  6. From the resulting mass, form balls with wet hands the size of a walnut.
  7. Deep-fry until golden brown.
  8. Lay out, dry on a paper towel.
  9. Make the sauce. Punch yogurt with gherkins in a blender and mustard.
  10. Serve hot falafel, watering the sauce next to it.
