Crispy Zucchini Coins

Make zucchini fried coins that can crunch like chips.   • 2 medium-sized zucchini sliced in circles 0.3-0.5 thick cm.

Recipe preparation:

  1. Cover the dish with paper towels. In a bowl, mix corn and wheat flour, basil, salt, cayenne and black pepper.
  2. In another bowl, beat the eggs.
  3. In a pan over medium heat, heat 0.5 cm. Of vegetable oil until it is heated, but smoke should not go.
  4. In small batches, dip the zucchini mugs into beat eggs, then roll in the corn mixture to completely cover them. Gently dip the zucchini into the oil, and fry until golden color, about 2 minutes on each side or until the appearance of a crisp. Remove from the oil with a slotted spoon and transfer to the prepared plate. Salt, cool slightly and serve.
