In a saucepan, bring to a boil 2 tbsp. water. Add 0.33 tbsp. large pearls of tapioca, partially cover and cook when boil slowly, stirring occasionally until the balls become translucent, about 40 minutes. Add 0.75 tbsp. unsweetened coconut milk, 2 tbsp. l sugar and a pinch of salt and mix, so that everything dissolves. Transfer to a bowl and add 1 tsp. vanilla extract.
