Chili Con Keso – Mexican Cheese Sauce

  • 1 shallot, diced
  • 2 sliced campari tomatoes or other small tomatoes, chopped cubes
  • 1/4 Art. coarsely chopped fresh cilantro
  • 1 tbsp. l (15 gr.) Butter
  • 2 slices of serrano, thinly sliced
  • 1 red jalapenos, thinly sliced
  • 1 tbsp. l flour
  • 1 tbsp. milk
  • 1 tbsp. grated cheese pepper pepper (about 120 gr.)
  • 1 tbsp. grated American cheese (approximately 120 gr.)
  • Tortilla chips for serving

Recipe preparation:

  1. In a small bowl, mix 1 tbsp. l shallots, chopped diced, tomatoes and half the whole cilantro; set aside.
  2. In a medium-sized saucepan over medium heat, melt butter. Add the remaining diced shallots, peppers serrano, jalapenos and 0.5 tsp. salt and fry, stirring until shallots will not become soft, about 3 minutes.
  3. Pour the flour into the pan and cook, stirring, until completely absorption, approximately 1 minute. Pour in milk and bring to a boil; cook, stirring occasionally, until slightly thickened, about 4 minutes.
  4. Stir in pepper jack and American cheese until they will melt, then remove the pan from the stove and add the remaining cilantro. Put in a bowl and put on top the fried tomatoes with onions. Serve with crisps.
