Chicken liver paste with nutmeg walnut

Pastes are prepared at home from the liver (pork, beef, birds) with the addition of vegetables, butter, aromatic herbs and spices. Especially delicious and aromatic paste is obtained from chicken liver with nutmeg – it adds nutty notes that are excellent combined with the taste of chicken liver.

  1. We wash the chicken liver and put it in boiling water. Add bay leaf, cut into 4 parts onions, salt, ground pepper, bring to a boil and simmer for 20 minutes. Periodically remove the resulting foam.

  2. We throw the finished liver into a colander (we leave the broth) and cool.

  3. We spread the liver in a blender bowl, grind, add softened butter, nutmeg and mix well.

  4. We try the resulting mass on salt, pepper and nut. If you want to strengthen the nutty flavor, then add some more nutmeg. If the mass is too thick, add a little broth to which cooked the liver. Consistency should be light and airborne.

  5. Ready-made fragrant chicken liver pate to the bowls or containers, cover and send to the refrigerator at least 1 hour. Chilled paste served with crispy bread.
