Bon appetit, I hope you had fun with us!
Steps
Steps taken: 0/0
- Elementary dough: in kefir with water, mix salt and soda.
- Add the flour. I poured 1.5 cups and mixed with a spoon. Then I added a little bit and knead with my hands to the state elastic dough. The dough should not stick to your hands, but at the same time do not be too cool, pour the flour carefully, previously sifting !!!
- Set the finished dough aside for about 30 minutes under the film.
- Preparing the filling: turn the boiled potatoes into a pusher mashed potatoes, add cheese (I grated it on a coarse grater, you can just smash), mix. We try the filling, if necessary add salt and pepper.
- Lubricate the hands with oil or wet with water and roll from the filling balls the size of a chicken egg.
- From the dough we make balls of the same size (if in doubt your dough rolling skills, do a little more).
- Flatten the dough ball with your fingers into a small cake. Place inside the filling, as shown in the video, collect the dough in a bag. If there is a lot of dough left at the end, you can pinch it off. With fingers we turn the bag into a cake, distributing the filling inside. Do not take rolling pin in hand until you get a cake with a diameter of 12-15 cm. Now already rolling out the roll carefully from the center to the edges. Constantly flip the cake when rolling and sprinkle with flour to the tender dough did not stick to the surface or to the rolling pin.
- We fry hichin in a dry preheated pan over medium heat. Not roll hitch for future use and moreover do not stack on each other raw !!! Rolled up – fried.
- Grease hot hitchin with copiously melted creamy oil.
- We cut the stack into 4 parts, because this is where the name of the dish comes from ( translating a cross). Enjoy your meal!
