Delicate smoked salmon mousse made from whipped cream with adding gelatin, lemon zest, capers and dill. Ingredients for the recipe:
- 90 gr. finely chopped smoked salmon
- 48 unsweetened crackers, or bread, or slices of baguette, or cucumber slices
- 1 and 1/4 Art. (310 ml.) 35% cream
- 1 tsp finely grated lemon peel
- 1 tsp edible gelatin
- 1 tbsp. l finely chopped fresh dill
- 1 tsp crushed capers
- A small amount of hot sauce
- Sliced fresh dill or finely grated lemon peel

Recipe preparation:
- In a small saucepan or glass bowl, mix 1/4 tbsp. (60 ml.) cream and lemon zest; pour in the gelatin. Let stand 5 min. to soften the gelatin. Put the pot on low heat and wait until the gelatin dissolves, or heat microwave gelatin with low heat. Remove from fire and allow to cool to room temperature.
- Stir salmon, dill, capers, hot sauce and gelatin mixture. In a chilled bowl, whisk the remaining cream until formed thick consistency. Add one quarter to the cooked mixture. and mix. Add the remaining whipped cream, gently mix until smooth. Cover and place in refrigerator for solidification, for about 1 to 2 hours.
- Using a pastry bag with a star tip or spoon, put the chilled mousse on crackers or slices of cucumber. Sprinkle canapé with dill or lemon zest.
