Burger “Fat Dag”

Burgers

  • 220 gr minced beef tenderloin
  • 220 gr minced beef brisket
  • 220 gr minced boneless short beef ribs (short rib), or just take 700 gr. ground beef with 20 – 25% fat
  • 250 gr finely chopped pastrami
  • 4 slices of medium-thick Swiss cheese
  • 1.5 tbsp. l (75 gr.) Melted butter
  • 4 brioche rolls or egg rolls, cut to the side in half

Cole Slow

  • Half a head of Chinese cabbage, chopped
  • Half a clove of chopped garlic
  • Half a small red onion, thinly sliced half rings
  • Half a pod of fresh jalapeno pepper, minced
  • 3 tbsp. l champagne vinegar
  • 1 tbsp. l Dijon mustard
  • 2 tbsp. l mayonnaise
  • 1 tbsp. l Sahara
  • 1.5 tsp salt
  • 1 tbsp. l Worcester sauce
  • 1 tbsp. l ShaSha sauce, see recipe below

ShaSha sauce

  • 12 canned hot banana chili peppers, tops chop, chop the peppers
  • 4 cloves of garlic
  • 1 tbsp. yellow mustard
  • 1 tbsp. white wine vinegar
  • 0.5 tbsp. Sahara
  • 2 tbsp. l flour

Recipe preparation:

  1. Make Cole Slow Salad: In a medium-sized bowl mix cabbage, garlic, onions, jalapenos, vinegar, mustard, mayonnaise, sugar, salt, Worcester sauce and ShaSha sauce. Cover the bowl and refrigerate for 1 hour.

    ShaSha sauce

    Grind pepper, garlic, mustard in a bowl of a food processor and vinegar. Pour mashed potatoes into a pot of non-reactive materials, add sugar and bring to a boil over high heat. Then turn down fire and simmer the sauce for 30 minutes. In a small bowl or glass mix flour and 0.5 tbsp. water to a uniform paste. Pour in mix in the sauce and continue cooking over low heat, constantly stirring for another 20 minutes until the sauce becomes very thick. Cool it and pour into a glass jar. The sauce can be stored in the refrigerator for 1 month.

  2. Cook burgers: preheat coal or gas grill. On the work surface, mix three types of minced meat and form 4 identical cutlets. Salt and pepper them generously. cutlets in high heat for 3-5 minutes on each side to medium degree of frying.
  3. Meanwhile, over medium heat, heat a large frying pan. Pour 4 slides of pastrami into it. After 2 minutes, put on each slide on a slice of Swiss cheese and cook until cheese on top will melt. Pour the butter in a pan and fry in it buns cut down, about 2 minutes.
