Burger as in the Smashburger diner

Smashburger specializes in fast food restaurants give a proprietary method of frying cutlets. Ground Beef Balls spread on a griddle greased with butter and flatten them spatula for 10 seconds.   • 4 tsp yellow mustard
  • 12 circles of pickled cucumbers + 1 tsp. brine
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder
  • A pinch of smoked paprika
  • 0.6 kg ground beef (fat content 20%)
  • Unsalted butter to grease
  • 4 hamburger buns cut horizontally in half
  • 4 slices of cheese
  • Ketchup, for assembly
  • 8 thin mugs of tomatoes
  • 4 thin slices of red onion
  • 4 leaf lettuce

Recipe preparation:

  1. Heat a griddle or large cast-iron skillet over medium heat within 10 minutes. Meanwhile, in a small bowl, mix mayonnaise, mustard and pickle. In a separate small bowl, mix onion powder, garlic powder, paprika, 0.5 tsp. salt and 1/4 tsp black pepper.
  2. Form 4 balls of ground beef. Lightly grease fry the buns with slices in a frying pan with butter and in batches down to golden color, 1-2 minutes. Put on a plate.
  3. Lubricate the pan again with butter and add 1 ball. beef. Press firmly with two large crossed with metal blades for exactly 10 seconds, then gently raise the shoulder blades. Sprinkle the cutlet with a little mixture spices and continue to fry without turning until it is well brown, 1.5-2 minutes. At this point, start frying another cutlet.
  4. Turn the patty over, sprinkle with spices and cover with a slice cheese. Keep frying until the cheese melts around the edges and the cutlet is not browned below, for about 1 minute. Repeat the same the same with the remaining minced meat.
  5. Brush the buns with mayonnaise sauce and add ketchup. Lay out cutlets on top, then pickled cucumbers, tomatoes, red onions and salad.
