For sandwiches:
- 900 gr. boneless skinless chicken thigh meat
- Coarse salt and freshly ground black pepper
- 1 tbsp. l dark brown sugar
- 2 tsp paprika
- 1/4 tsp ground cayenne pepper
- 1 tbsp. l vegetable oil
- 1 tbsp. crumbled blue cheese
- 2 medium-sized carrots, cut into cubes
- 2 celery stalks, cut into cubes
- 2 tomatoes, peeled and diced
- 1 soft French baguette (90 cm long) or Italian bread
- 1 tbsp. buffalo sauce for chicken wings (Frank’s RedHot), and same more optional
For ranch sauce:
- 3/4 Art. mayonnaise
- 1/4 Art. buttermilk
- 1/2 tsp granulated garlic
- 1/2 tsp chopped fresh dill
- 1/4 tsp honey or agave syrup
- 1/4 tsp Dijon mustard
- Coarse salt and freshly ground black pepper

Recipe preparation:
- Preheat roaster or oven with grill. Season chicken salt and black pepper; mix with brown sugar, paprika and cayenne pepper. In a heat-resistant pan with a diameter of 30 cm. heat vegetable oil to a moderate to high temperature. Fry half the chicken, for 2 – 3 minutes. on each side to golden color; put on a dish. Fry the remaining meat, then return the first batch of meat to the pan. Add Buffalo Sauce and bring to a boil. Then reduce heat to medium temperature. and continue to simmer until the meat is completely warmed up, about 10 minutes Cool slightly, then finely chop and return to the pan. Add more sauce if desired buffalo, then bake meat with sauce until caramelization begins and crisp formation, approximately 4 min.
- Mix carrots, celery and tomatoes in a bowl, season with salt and black pepper.
- Make ranch sauce: Mix in a separate bowl. mayonnaise, buttermilk, garlic, dill, honey, mustard, 1/4 tsp salt and a pinch of black pepper.
- Incise the loaf on the side along the entire length. Put on the bottom half loaf of crumbled blue cheese, then lay in layers chicken meat and vegetables. Cut into small sandwiches and serve with ranch dressing.
