Boiled crayfish

A favorite summer beer snack can be a hearty dinner if cook crayfish with vegetables and sausages. This boilie recipe is different and the fact that at first spices are boiled in water, saturating it with spicy taste and aroma, and then vegetables are added and, last turn, crayfish. But so that you don’t have to throw away the whole lunch, make sure that no “sleepy” cancer gets into the broth. Ingredients for the recipe:

  • 4.5 kg live crayfish
  • 1.2 kg small potatoes with red peel if the tubers are larger 5 cm in diameter, cut them in half
  • 8 corncobs cut in half
  • 450 gr anduy sausage, cut into slices of 2.5 cm.
  • 1 tbsp. l black pepper peas
  • 1 tbsp. l coriander seed
  • 2 tbsp. l carnations
  • 1.5 tbsp. l allspice peas
  • 23 l water
  • 450 gr coarse salt
  • 4 tbsp. l cayenne pepper
  • 2 tbsp. l garlic powder
  • 2 tbsp. l paprika
  • 1 tbsp. l onion powder
  • 1 tbsp. l dried thyme
  • 1 tbsp. l dried oregano
  • 1 tbsp. l mustard powder
  • 1 tbsp. l dried dill
  • 6 bay leaves, crushed
  • 2 heads of garlic, unpeeled, but divided into cloves

Recipe preparation:

  1. Grind black pepper, cloves in a mill or coffee grinder, coriander and allspice for 10 – 15 seconds.
  2. In a pan of 50 liters. pour 23 liters. water and pour ground spices, salt, cayenne pepper, garlic and onion powder, paprika, thyme, oregano, dry mustard, dill and bay leaf. Cover the pot and bring to a boil over high heat for 40 min
  3. Rinse the crayfish well so that there is no dirt or sludge left on it. Put them in a large container, fill with cold water and rinse. Then put a few pieces in a colander and wash under running water. Take away the garbage and dead crayfish. Pour out of the container dirty water and put crayfish back there. Repeat the whole process 6 – 8 times until the water in the tank after the crayfish is clean.
  4. When seasoned water boils, add potatoes to the pan, corn, garlic and sausage. Cover and cook for 10 minutes.
  5. Immerse in a crayfish broth, cover and cook for 3 minutes. Turn off the stove and leave the pan with the lid closed for 10 minutes. Then drain and serve immediately.
