  1. In a bowl, combine grated yolk, olive oil, yogurt, salt, spices and half lemon juice.
  2. Spread beetroot, dried olives in a blender bowl (pitted), gherkins. Punch and add salt and remaining lemon juice.
  3. On the grill, dry the toast bread on both sides.
  4. On a slice of bread, spread the beetroot paste, on top of the squirrels and yolk cream. Cover with a second slice of bread.
  5. Cut the sandwich into convenient pieces, decorate with greens, sprinkle with olive oil, sprinkle with pepper.
