  • 8 dried chilli guasillo seedless
  • 2 plum tomatoes, cut into 4 parts
  • 1 small onion, cut into 4 pieces
  • 8 garlic cloves, unpeeled
  • 900 gr. beef neck, cut into pieces of 2-5 cm.
  • 1/2 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 1 tbsp. chopped cilantro
  • 1/4 tsp dried thyme
  • 2 bay leaves
  • Corn tortillas, warm with a variety of side dishes (cheese, green onions, chips, salsa) for serving

Recipe preparation:

  1. Heat a large cast-iron skillet or cauldron to moderate high fire. Add chilli and fry, pressing them with a spatula, 10 sec. on each side; put on a plate. Add tomatoes, onions and garlic and fry, stirring, until stains appear on the vegetables, about 10 min.
  2. Peel the garlic and put in a blender with tomatoes and onions. Cut the chili into pieces and add to the blender along with 1/2 Art. water and 1 tsp. salts; grind until smooth. Strain mix through a fine mesh sieve into the pan.
  3. Add beef to the pan and soak in chili sauce with using forceps. Cook over medium high heat from time to time. stirring until a crust begins to form on the meat, about 10 min Add cumin, cinnamon and cayenne pepper and cook another 1 min. Puree 2.5 tbsp at the same time. water, cilantro and thyme in a blender; put in a pan along with bay leaves.
  4. Reduce the heat to a minimum. Cover and simmer when boil until the meat becomes very tender, about 2 hours, adding up to 1.5 tbsp. water if the sauce gets too thick. Remove bay leaves, season with salt and black pepper. Serve in flatbread with assorted side dishes.
