Ingredients for the recipe:

  • 900 gr. pizza dough, divided into 16 balls of 5 cm. each
  • 4 thick slices of bacon (pork belly)
  • 1/2 tbsp. extra virgin olive oil
  • 1 tbsp. l finely chopped fresh rosemary
  • 1 tbsp. l fresh thyme
  • 1 tsp red pepper flakes and some more for decoration
  • 3 crushed cloves of garlic
  • 1 tbsp. l finely chopped fresh parsley
  • Salt
  • Baking flour to sprinkle cooking surface
  • 4 tsp tomato paste
  • 16 fresh basil leaves
  • 340 gr 0.6 cm diced mozzarella each
  • Warm marinara sauce for serving

Recipe preparation:

  1. Place the pizza stone in the middle level of the oven and preheat it to 260 ° C. Cover the pan with baking paper and place it on a stone for pizza. In a small saucepan on medium heat olive oil on fire. Add rosemary, thyme, red pepper flakes and garlic. Remove the stewpan from the heat and give the mixture cool slightly. Add parsley and season with salt. Leave in side.
  2. In a medium-sized pan, with a moderate low temperature, periodically turning, fry bacon to crisp, about 10 min. Lay on paper towel plate and chop finely.
  3. Sprinkle the work surface lightly with flour. Roll each a dough ball to a 9 cm circle. Lubricate the center of each circle 1/4 tsp tomato paste, leaving the edges greased.
