  • 3 tbsp. flour and a little more for dusting the working surface
  • 1 tbsp. l baking powder
  • 1 tsp salt plus 1 tsp.
  • 1/4 Art. vegetable or pork fat
  • 1 – 1.25 Art. room temperature water
  • 4 tbsp. rapeseed oil
  • 1 tsp ground pepper ancho
  • 0.5 tsp black pepper

Salsa

  • 1 (425 gr.) Can of black beans, drain the liquid, beans rinse
  • 2 tomatoes Cream, peeled, diced
  • 1 (113 gr.) Can of fried green chili peppers
  • 1 clove garlic, chopped
  • 1 avocado, cut in half, remove the stone, pulp dice
  • 1 lime juice
  • 1.5 tsp ground pepper ancho
  • 150 gr. crumbled cheese keso fresco (can be replaced Adyghe), approximately 0.5 tbsp.
  • 2 tbsp. l rapeseed oil
  • A pinch of salt and ground black pepper
  • 3 tbsp. l chopped cilantro leaves
  • Mix all the ingredients

Recipe preparation:

  1. Sift flour, baking powder and 1 tsp into a large bowl. salt. Mash the margarine with a fork and stir in the flour. Gradually add water and knead the dough in the shape of a ball. Put it on sprinkled flour the work surface and knead until the dough is smooth and homogeneous. Cover it and leave for 5 minutes. The dough also can be kneaded in a stationary mixer.
  2. In a small bowl, mix 1 tsp. salt, anchovy pepper and black pepper.
  3. Heat rapeseed oil in a large skillet with high sides to a temperature of 180 ° C. Divide the dough into 4 equal parts. Roll out 0.5 cm thick square from each piece. Cut into squares 5×5 cm. Carefully throw into a hot oil of 6 square dough pieces. Using tongs, turn over quickly sopapillas so that they swell evenly and fry.
  4. Fry until golden brown. They should become like small pads. Put the finished sapapillas on a baking sheet, covered with paper towels. Sprinkle with a mixture of peppers. Also repeat with the remaining test. Transfer the finished pillows on a serving dish, pour 1 tbsp. l salsa and serve. Eat the remaining donuts by sprinkling with powdered sugar.
